No-Bake Pumpkin Peanut Butter Balls

New June 2023: I really like my No-Bake Energy Balls but I needed something with pumpkin. This turned out really well, for pumpkin.  The first one I had was only in fridge for about 15 minutes.  I think I will like it more as it firms up.  It is a great energy snack and gives you some added health benefits.

Ingredients

  • 2 cups oats
  • ½ cup peanut butter
    • I like to use crunchy.
  • ½ cup pumpkin puree
  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ½ cup toasted coconut
    • You could do nuts, raisins, or chocolate chips
  • ½ teaspoon kosher salt

Directions

  • Add all ingredients together in large bowl until well combined.
  • Shape into 1″ balls and place in airtight container.
  • Refrigerate until firm.  Store in refrigerator.
