No-Bake Pumpkin Peanut Butter Balls

New June 2023: I really like my No-Bake Energy Balls but I needed something with pumpkin. This turned out really well, for pumpkin. The first one I had was only in fridge for about 15 minutes. I think I will like it more as it firms up. It is a great energy snack and gives you some added health benefits.
Ingredients
- 2 cups oats
- ½ cup peanut butter
- I like to use crunchy.
- ½ cup pumpkin puree
- ¼ cup honey
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- ½ cup toasted coconut
- You could do nuts, raisins, or chocolate chips
- ½ teaspoon kosher salt
Directions
- Add all ingredients together in large bowl until well combined.
- Shape into 1″ balls and place in airtight container.
- Refrigerate until firm. Store in refrigerator.
