Corn Pudding

Updated December 2023: My friend Ulla often brings a corn pudding to gatherings, and I just love it.  We are only at the same gatherings once or twice a year, so I had to learn how to make it my own self.  I absolutely love this dish and can’t get enough of it.  It doesn’t have to be a special occasion as far as I am concerned so I made it again this month and have decided to add it to Christmas dinner.  This is also a good leftover dish. 

Ingredients

  • 1-15 ounce can whole corn
  • 1-15 ounce can cream corn
  • 1 cup sour cream
  • 2 eggs
  • 1 box Jiffy Cornbread muffin mix
  • 1 stick butter, melted

Directions

  • Preheat oven to 350 degrees.  Spray 2 1/2-quart baking dish with nonstick cooking spray.
  • In a large bowl, stir together all the ingredients.
  • Transfer mixture to prepared dish.
  • Bake for 45-50 minutes.  Top should be golden and center set but still soft.
  • Let set 5 minutes before serving.
